When we went to visit my oldest son and his family for Christmas, I made them for a small family gathering. And I have made them a few times since using dried Calimyrna figs, dried black mission figs and also pitted Medjool dates. All of them were wonderful.
You start with a slice of Prosciutto and cut it in half lengthwise, like so....
Next, shave a piece of Parmesan cheese with a vegetable peeler and lay it on the end of piece of Prosciutto....
Cut the fig in half and lay each on the Parmesan. If you decide to use dates instead of figs, leave the dates whole and use one date for each piece of Prosciutto...
Starting at the end with the fig, gently roll up the Prosciutto around the Parmesan and fig and fasten with a toothpick. If the Prosciutto tends to tear a little, just tuck the tear in and keeping rolling.
And in a few minutes you'll have a tray full of these wonderful little morsels for your guests to enjoy with a glass of wine.
They'll think you're brilliant and you don't have to tell them it was Mark Bittman's idea.
